Cod ceviche with Sweet Life Mix and avocado cream


Ingredients for 10 people

50g Ardo Quinoa
1 Ardo Avocado half
250g Ardo Sweet Life Mix
5g Ardo Coriander
5g Ardo Chili red diced
5g Ardo Spring onions
250g cod fillet
Salt and pepper
Olive oil
Juice of 3 limes




  1. Fry the quinoa until crisp in the deep fryer at 180°C. Season with some salt.
  2. Steam or bake the Sweet Life Mix as indicated on the package  and season with salt, pepper, coriander and a dash of olive oil.
  3. Cut the cod into thin slices and marinate in a marinade of lime juice, chopped chilli, spring onions, salt and pepper.
  4. Mash the avocado half into a smooth paste with a dash of olive oil, lime juice, salt and pepper.
  5. Serve the cod with the Sweet Life Mix on top. Garnish with a dot of avocado cream and sprinkle some lime zest and crispy quinoa on top.
