Jar with quinoa, organic sweet potato relish and fresh goat cheese

• 2 kg Quinoa Ardo
• 500 g Organic sweet potatoes Ardo
• 300 g Organic peppers stripes 3 colours Ardo
• 200 g Organic onions sliced Ardo
• 50 g Chives Ardo
• 20 g Garlic diced Ardo
• 10 g Chili Ardo
• 500 g fresh goat cheese
• 2 dl olive oil
• 50 ml white wine vinegar
• 2 tablespoons of sugar
• 400 g lettuce

Preparation

  1. Let the sweet potato, onions, peppers, chili and garlic simmer in some olive oil.
  2. Add the wine vinegar and sugar and let it simmer till tender. Allow to cool down
  3. Heat up the quinoa in the steamer for 5-7 minutes and allow to cool down immediately.
  4. Add the rest of the olive oil to the quinoa and season well with pepper and salt.
  5. Mix the fresh goat cheese with some pepper and the chives.
  6. Fill half of the Jar with the quinoa, add the relish and finish with the goat cheese and the lettuce.
