Quinoa sweet life stuffed courgettes


Serves 10

- 800g Ardo Quinoa
- 800g Ardo Sweet life mix
- 5g Ardo Garlic diced
- 10g Ardo Flat parsley
- 500g Ardo Letscho
- 10 medium or round courgettes
- 200g feta cubes in oil
- 50ml olive oil
- Salt
- Pepper




  1. Hollow out the courgettes and cut the flesh into small pieces. 
  2. Bake the Sweet life mix and the flesh of the courgettes in some olive oil. Add the garlic and the quinoa and let it simmer for a while. Season with salt and pepper and finish with parsley.  
  3. Allow to cool down and mix with the feta cubes. 
  4. Bake the courgettes briefly in some olive oil. Fill them with the quinoa mix and put in a warm oven (160°C) for about 30 minutes. 
  5. Warm the letscho in a pan. 
  6. Serve the stuffed courgettes with the letscho.
