Salad with organic sweet potato, white cabbage, quinoa and berloumi

1kg Organic Sweet potatoes Ardo
1kg Quinoa Ardo
750g Organic Cut green beans Ardo
500g Organic White cabbage Ardo
100g Organic Diced onions Ardo
15g Organic Parsley Ardo
10g Organic Diced garlic Ardo
500g Berloumi
8 tbsp organic olive oil
4 tbsp organic apple vinegar
2 tbsp organic grain mustard
pepper
salt

Preparation

  1. Steam the cut green beans and white cabbage until al dente and rinse in cold water.
  2. Defrost the quinoa.
  3. Stir the onions with the garlic in some olive oil and add the sweet potatoes.
  4. Season with salt and pepper. Allow to cool and mix with the green beans, white cabbage and quinoa.
  5. Make a vinaigrette with the olive oil, mustard and apple vinegar and season with salt and pepper. Add the parsley.
  6. Grill the berloumi.
  7. Finish the salad with the grilled berloumi and vinaigrette.
